Wedding cake cookies? Why not? Stack your cookies to make pretty individual wedding cakes for your guests. Decorate with icing and some fondant flowers. Add some jam between layers just a like a real wedding cake. Is this a do it yourself project? It all depends on your level of competence doing cake (or in this case cookie) decorating. Want a cheap date night with your soon-to-be spouse? Go wedding cake tasting! Many bakeries offer free wedding cake samples (be sure to call ahead) to engaged couples. Wedding cake tastes differ from place to place, so be sure to try before you buy. A sample will also give you an idea of which type of wedding cake, flavor, and filling you like and which ones you don’t.
Wedding Cake Mistakes #2: Assuming the cake is too expensive (or too complicated).
Love a wedding cake you saw in a magazine, on a blog, or on Pinterest, but it looks out of your price range? Don’t be so quick to dash your dream cake… just ask! A baker can give you a price estimate, let you know if the idea is feasible, or suggest ways to make it for less, if cost is the major deterrent. Make sure you find a baker you trust who has reputable work, a photo gallery of past designs, and a great review.
Wedding Cake Mistakes #3: Assuming the baker is a mind reader.
Be specific! Bring a photo of the wedding cake you have in mind to give to your baker. If you want a similar look with a few changes, be sure to write the ideas down on paper so the baker can have it on file. Since the baker has likely worked with many couples in the past, ask his or her advice or opinion on a particular design; he or she may have some great tips or ideas you haven’t thought of yet. And, while it’s unlikely your wedding cake will result in an epic fail, it’s best to be thorough when you want something specific on your cake. 
Wedding Cake Mistakes #4: Not ordering the cake YOU want.
Don’t be pressured to pick a wedding cake based on a traditional (or popular) flavor, color, trend, or style. Moreover, if you want a really simple cake, don’t be afraid to say so. Some of the prettiest cakes are the most simple – yet elegant – wedding cakes. And, finally, don’t pick a trending cake just because it’s popular: trends may change, but your photos? Those last forever.
Wedding Cake Mistakes #5: DIYing a wedding cake without a trial-run (or five).
Planning to make your own cake? It can be done! However, give yourself plenty of time and do a trial-run. Also, figure out where you’ll store the cake and how it will be delivered to your wedding.
Wedding Cake Mistakes #6: Not paying for delivery.
Throughout your wedding, there are lots of extra fees you’ll encounter. One of the fees you should never skimp on is the cake delivery charge. Transportation, delivery, and placement of a wedding cake is an art best left to the pros!
Wedding Cake Mistakes #7: Moving the cake once it is set.
Have your cake table ready before delivery. Once the cake is placed and set, it’s set. Don’t move it or you run the risk of ruining it.
What to Do If Something Goes Awry
At the end of the day, remember… it’s just a cake. Albeit a very gorgeous, expensive cake… but it’s just flour, sugar, and icing. Your cake may not look how you’ve dreamed, it may topple over, or it may never arrive. (If this happens, ask someone to grab you a grocery store cake. Yeah, it’s not the same thing by any stretch of the imagination, but it’s still cake. Guests want cake; they could care less about the presentation.) What’s important? Marrying your best friend at the end of the day. The rest? Just details.

Make Your Own Mini Wedding Cakes


 
This easy recipe will make four mini wedding cakes from Betty Crocker cake mix. These make great individual servings or to be shared by a couple, as well as great favors. Buy tiny cake pans from William Sonoma.
 
 
 
Mini Wedding Cake Recipe 
  • 1 Betty Crocker Supermoist white cake mix
  • 2 whole eggs
  • 1/2 cup milk
  • 1/3 cup oil
  • 1 cup sour cream
  • 1 (16 ounce) container Betty Crocker Whipped Fluffy White Frosting
  1. Set your oven at 350 degrees F.
  2. Combine top five ingredients, cake mix, 2 eggs, 1/2 Cup milk, 1/3 cup oil and 1 C of sour cream.
  3. Mix on medium for thirty seconds.
  4. Scrape bowl.
  5. Then increase speed to high and beat for two minutes.
  6. Spray your multi-cake mini wedding cake pan with Pam for baking.
  7. Fill pans up to the top of the bottom layer.
  8. Bake 15 minutes in 350 degree oven, then rotate pan and bake for another 15 minutes.
  9. Frost an even layer of icing using a spatula.
  10. Decorate using frosting tips, ribbon, pearls or other decorations.  
So if you are looking for an option to paying an expensive baker for that huge wedding cake, think about choosing these mini wedding cakes, easy to make at home and decorate with detailing from your local grocery store.

Buy two pans and double the recipe each time. Faster and easier yet!

Wedding Cakes Go Chocolate

 
Chocolate wedding cake? Yum! I know, you're used to white or even pastels, but why not go with chocolate? It's rich, a little unconventional, and what I like, surprising. I like something a bit different. This chocolate petal wedding cake has a mocha spice cake under the bittersweet chocolate 'leaves.' This is one of the most striking wedding cakes I've seen.
 
 
Another cake shown on Martha's website is this chocolate chestnut wedding cake. It is topped with sugared fruit and laurel leaves, so no worry about finding in season flowers if you are having a winter wedding. Chocolate wedding cakes appeal to me for winter weddings, they're warm, rich and melt in  your mouth! Yum!

Getting In Shape - Eat This, Not That

Are you trying to get into shape for your wedding day? Or stay in shape after your wedding? Here are some easy choices. The left column are to be avoided at all costs, and the suggestions for replacement snacks improve from left to right.


Craving Candy but want a good replacement? Try baked fries. Or better yet, baked sweet potato fries, or best of all "veggie fries" (zucchini, beets or parsnips). Want to try my favorite recipe? Head over to Tracey's Culinary Adventures for the recipe--one word describes these--YUM!

Are you a soda drinker? 100% fruit juice is a good choice compared to soda, but 100% fruit juice mixed with sparkling water is a better choice, but your best choice? Good old H2O! Want to make your water 'better'--buy yourself some sexy Fiji Water.

You know how much better it tastes just from looking at the bottle! And since it's from an aquafir at the edge of the rainforest it is far from pollution, far from nasty acid rain and far from industrial waste!  Good for your skin. Good for you! So yes, water is your best choice!

Dying for some chips and dip? Heavy on the salt, onion and sour cream? OK, just look at that list of ingredients--do any of them look good for you? Let alone mixed together with fried slices of potatoes! So move to a healthier choice.  Try some 65% cocoa dark chocolate.  Or moving healthier, granola with low fat yogurt.  Best? Dried fruit. I prefer apricots or cranberries, or a tiny box of raisins. Need some fruit to offer your guests? Filled with sugar but all natural sugars, so if you have to binge... go natural!

Keep you portions under control (well the water you can probably drink as much as you like!) but remember, no matter what you are eating, portions are key. Be sure and talk to their seafood departments for great ideas for cooking fish and to their whole body section for ideas for soaps, lotions and vitamins to keep you healthy. Whole Foods offers it all! And it's just a short drive away. 

And just in case you haven't chosen a baker for your wedding cake? Stop in their bakery and talk to their master bakers about their beautiful creations for your wedding day. Anyone who has ever walked by their bakery case knows they do beautiful work! (OK, so cake probably isn't healthy, but on your wedding day, you can splurge!)
