Tuna Dill Dip from Hungry Girls

Wedding season is coming and this means bridesmaids everywhere are gearing up for bridal showers. Whether you are planning a shower that is big or small, some new recipes are always a nice addition. And low cal recipes are always a bonus since it's likely the bride and some of the rest of the wedding party and guests are being careful what they eat or just prefer to eat a healthy diet.

Hungry Girl's Tomato Tuna Bruschetta

MAKES 16 SERVINGS

Ingredients:

1 pouch (2.6 oz.) or 1 can (5 oz.)StarKist® Chunk Light Tuna in Water(if canned, drained and chunked)

16 slices French bread, about ½ -3/4 inch thick and 3-½ by 5-½ inches wide

4 cloves garlic, minced

¼ cup Extra Virgin Olive Oil

2 cups chopped plum tomatoes

1 cup shredded Mozzarella cheese or 1 cup fresh Mozzarella, chopped and drained

2 Tbsp. minced fresh parsley

Salt and pepper to taste

4 pieces Bibb lettuce
 
Directions:

    Slice your french bread and toast the bread lightly. Combine garlic with olive oil. Brush this mixture on each side of every piece of bread. Reserve remaining oil. Gently combine tomatoes, cheese, tuna, parsley and reserved oil.  Add salt and pepper. (If you are on a low salt diet, use some Mrs. Dash or other salt substitute. Place ¼ cup of the mixture on each piece of toast. Line each plate with a leaf of lettuce and  place one piece of bruschetta on each plate.
Hungry Girl's Creamy Tuna Dip Dill

MAKES 12 SERVINGS

Ingredients:


1 package (8 oz.) light cream cheese

½ cup light mayonnaise

½ cup light sour cream

2 green onions, white and green parts, cut in 1-inch pieces

2 tsp. dried dill weed

Directions:

    Put tuna, cream cheese, mayo, sour cream, onions and dill in your food processor and use a metal blade. Pulse on and off just until it is well blended. Put into a small bowl then chill several hours to overnight prior to serving. Serve with sides of cut vegetables and/or light crackers.

Ingredients:
(8) cheese-flavored soy crisps or mini rice cakes
(8) round cucumber slices
(1) 3-oz. pouch StarKist® Sandwich-Ready Albacore Tuna Salad
Directions:
1. Top your soy crisp or mini rice cake with a single slice of cucumber.
2.  Top the cucumber with tuna salad and serve.
