Cool Summer Drinks

Cook Au Vin gives us the basic recipe for a great summer drink called Peach Flips.
 
Here's my take on the recipe for a great way to help your guests quench their thirst with the added taste of great fresh Georgia peaches. If you want to make these without using fresh peaches you can used frozen ones for making larger batches for parties or weddings.

Peach Flip or Peach Lemonade Coolers

4 medium sized, ripe peaches, peeled, halved and pitted
1 cup lemonade
2 ounces Smirnoff Vodka
 
Peach Slices

Puree the peaches with lemonade until smooth using your blender.

Pour vodka over ice in 4 rocks  glasses.  Top off with peach-lemonade puree that you made in your blender.
 
Add a slice of peach on the edge for an accent. Yum!  Don't like vodka? Use champagne instead! Perfect replacement for a mimosa at a brunch wedding.

Champagne Cocktail

Champagne cocktails should be pretty and taste good. This Strawberry Kiwi Champagne Cocktail is perfect for a wedding or bridal shower. Add that pretty slice of kiwi to each glass to give it a bright green accent.  
 
How can you make one? Add 1 bottle of champagne to a pitcher, plus 1 bottle of Strawberry Kiwi Fruitwater, 1 cup strawberries, chopped. For garnish add some pretty slices of kiwi or add an whole strawberry. Serve in a champagne flute or on the rocks in an Old Fashioned Glass. This drink is sure to wow your guests and be a 'little bit different' from the usual champagne cocktail.

Kiwi Strawberry Bellinis

Kiwi Strawberry Bellinis--pretty, tasty and perfect for  your wedding reception or bridal shower. This Kiwi Strawberry Bellini is a new twist on the usual Bellinis, but oh so pretty! Use it for a creative signature drink.

Recipe for Kiwi Strawberry Bellini
 
4 Zesperi Kiwi
16 Strawberries
1 (750ml) bottle Prosecco
 
Skin the kiwi and quarter them. Puree in blender or food processor until you get a smooth consistency. Stem strawberries. Slice strawberries into halves. Puree strawberries in blender or processor until smooth.
 
Spoon puree of kiwi into a champagne flute, next add strawberry puree (approximately 2 heaping teaspoons of each).  Pour your favorite Prosecco over the fruit purees and enjoy your new favorite cocktail! Cool and tasty--pretty as well. 
 
(Trying to go non-alcoholic? Use white grape juice in place of Prosecco.)

I love the way the decorated by scattering a few rose petals on the tabletop from a rose that matches the single rose in the vase. Very classic. Very simple. Very effective. So enjoy your mimosas--and have one for me.

Fall Wedding Signature Drink



Wedding signature drinks sport a unique garnish of sugared cranberries in the drink shown above. With fall coming soon, brides are sure to be planning some unique drinks, but this one is perfect for the bride who isn't planning on serving alcohol or who is looking for a drink to round out the night that is non-alcoholic.

As a lover of apple cider, it only gets better with the addition of these sugared cranberries. If a martini can sport an olive or onion, why can't  your cider have some cranberries on a swizzle stick? Here's the recipe to make these great tasting treats. If you are planning a picnic wedding and serving lemonade, try using blueberries that are sugared the same way. Good for you? Nope! Taste great? Yes! Give them a try and let me know what you think of them.

Sugared Cranberries for Garnish
Makes 2 cups

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 2 cups fresh cranberries
  • 3/4 cup fine sanding sugar

Directions

  1. Combine 2 cups sugar and 2 cups water in a small saucepan; bring to simmer over medium heat while stirring. Remove from heat. Cool 10 minutes. Place berries in a bowl then pour syrup over the top. Cool completely, cover with Saran Wrap, and refrigerate overnight.
  2. Drain berries in a colander over a bowl, saving syrup for another use. Put sanding sugar in a shallow bowl. Add the cranberries in batches, rolling around to coat with sugar. Spread sugared berries in single layer on a baking sheet. Let stand at room temperature until dry, about 1 hour.
 
 
Another cider option is mulled cranberry cider with a splash of port. Yum! Use cinnamon sticks as swizzle sticks with a tiny slice of kumquat. The recipe below is for 12, multiply it out for the right number of guests for your party.

Ingredients

  • 9 1/2 cups cranberry juice
  • 1 cup freshly squeezed orange juice
  • 6 cinnamon sticks, plus 12 more for garnish
  • 8 star anise
  • 6 whole allspice berries
  • 3 ounces fresh ginger, peeled and thinly sliced (about 18 slices)
  • 1/2 cup water
  • 4 tablespoons sugar
  • One 375-milliliter bottle port
  • 12 thinly sliced kumquat rounds, 6 to 8 kumquats for garnish optional

Directions

  1. In a medium pan, combine everything but the port and kumquats. Bring to a simmer over medium heat. Remove saucepan from heat. Cover, steep until ready to serve, up to 1 day.
  2. Right before serving, add the port to mixture in saucepan, and bring back to a simmer; do not boil. Keep warm over low heat while serving. Strain and divide among glasses, and garnish each with a cinnamon stick and kumquat slice.

Tuxedo Accents For Your Wedding

Champagne Goes Pink For Your Wedding

Sometimes drinks look as good as they taste! Try these raspberry champagne cocktails decorated with a gorgeous sprig of mint! Serve them in champage flutes and float some fresh raspberries in each one.
 
While previously pink champagne was seen as inferior to white champagnes, pinks or roses are seen as the perfect way to celebrate romance or weddings.
 
 
 
How do you make white champagne pink? Ah! Tricky that. One way to make your white champagne pink is to add some red wine to the white champagne. Depending on how much red you add the depth of color may vary. Winemakers suggest using wines from the same area as the white champagne you are planning on using.
 
Another way to turn the champagne from white to pink takes place while the wine is still fermenting. If the winemaker leaves the skins of the black grapes used to make the champagne in the vat, the skins will dye the champagne to a pretty pink color. This practice is harder to control and isn't used as frequently today as adding red wine.

While many vintners make pink champagne, the only true champagne comes from grapes grown in an area of France called Champagne that is northeast of Paris. Wine experts consider only champagne made in this area to be 'true champagne.' But this doesn't mean you can't enjoy champagne made in other areas of the world.

Take some time to taste test a variety of champagnes you'd like to serve at your wedding and then consider if you're interested in pink champagne or even the new blue champagne, Blanc de Bleu, made in California.


Then choose some pretty champagne flutes to serve it in. A pretty champagne flute can add eye appeal to a less expensive brand of champagne.

If you're going pink, consider adding some raspberries and mint or strawberries and float them in the glass. Even pomegranites can be used. Going blue? Try some blueberries on a skewer or some blackberries and mint. Sometimes the garnish is as important as choosing the right champagne. So salud and enjoy.
